Fresh strawberry jam

Last weekend Paul and I went on one of our unnecessary gourmet food excursions where we treated ourselves to pistachio gelato and some glossy red strawberries I couldn't pass up (it was the weekend which means a little indulging was called for). Most of my weekend plans involve grand ideas of organizing, baking, and tapping into my creativity, which all seem to fall by the wayside when Sunday evening rolls around and I'm trying to prepare for another work week. I'm glad to say this weekend was different, perhaps it was the delicious strawberries staring at me from their little clear carton or the fact that my love of breakfast foods was satisfied after making a batch of fresh strawberry jam.

The bright lemon flavor gave this ruby spread a refreshing taste while the bits of strawberry provided the perfect sweetness. The full jar has definitely become a morning staple with my toast as well as a bit of motivation for next weekend's cooking.
