Lately I've been craving cool or chilled food like fresh fish, iced coffee, or ripe fruit, but after a while the standard icy drinks get a little boring and I need to switch it up. I picked up this cookbook about aguas frescas and other frozen treats a while back and as the temperature began to spike I knew a refreshing drink from the book would be the perfect switch I was looking for. Since I always have a bowl of limes hanging out in the kitchen, I cut a few and mixed the citrusy juice together with cucumber and sugar to make a refreshing cucumber-lime agua fresca. The drink is incredibly refreshing and although it can't provide the caffeine my iced coffee offers, I'm willing to forgo the little pick me up and switch to this hydrating drink every now and then.
Cucumber-lime cooler (from Paletas)
1 large cucumber
6 cups water
1/3 cup lime juice (2-3 limes)
1/3 cup sugar
- Slice the cucumber and blend in blender with water
- Strain mixture into a pitcher using a fine mesh sieve
- Add lime juice and sugar
- Stir to combine, add more sugar if needed
